LAVORAZIONE Le uve raccolte manualmente vengono trasportate in cantina e sottoposte a diraspatura e macerazione delle bucce a freddo. Il mosto fiore ottenuto con pressatura soffice viene avviato a fermentazione alcolica che dura circa due settimane.
